If you’ve known someone long enough to witness them work and do what they love, you can learn a lot about what makes them happy. These days, if you’re lucky enough to see someone truly enjoying life and their work, then you’re fortunate.

A few weeks ago, I received a message from my old buddy, Chef Clint Connway, inviting us to his new restaurant. I said, “Wazzzz up, Clint baby? How you doing?” He replied, “I want you to come see us. We’re located between Weatherford and Granbury, and we have a menu you’re going to love at the NEW Rio Brazos Ranch Grill. We’re doing great things, and I love it!”

We scheduled a date, got in the car, and drove out to check out what Chef Clint was up to. When we arrived, it felt like we were in the middle of nowhere, but there stood a beautiful new Texas rustic-looking building. As we got out of the car, I spotted Chef Clint coming towards us, and more importantly, I could smell the wood-fired deliciousness wafting through the air. My spidey senses started tingling–I was hungry! I gave Chef a hug and got to tour the place before we sat down.

The restaurant is uniquely different–big yet cozy, vibrant yet warm. I absolutely loved the Texas-friendly atmosphere. We sat down at the Chef’s Table, which allows you to experience a 5, 6, 7, or 8-course meal curated and prepared especially by Chef Clint, and facilitated by himself, Chef Red, and the rest of the culinary team. It’s fantastic because you get to watch his talented team create fresh, creative Texas cuisine, tasty desserts, and you can gaze at his impressive black wood-fired Santa Maria grill. If you love fire, you’ll be mesmerized as you see, smell, feel, and hear the sizzling steaks, seafood, breads, and more cooking over those grills. The wood fire aromas are intoxicating–I absolutely loved it.

Chef Clint serves you directly from the kitchen while the front-of-house team takes care of you from the restaurant side. It’s truly an incredible, uniquely different experience that everyone should enjoy. It’s fun, entertaining, educational, and loaded with deliciousness, with Chef Clint’s one-of-a-kind personality making it even better, all wrapped up in an inviting Texas chic atmosphere. You can also chat with Chef Clint about the kitchen happenings, his life, and his culinary passion for serving delicious food to anyone who wants to come and enjoy it. He told us: “I finally have my dream job, and I love it!”

I’m serious; I’ve enjoyed meals in 33 states from coast to coast, and sitting at Chef Clint’s table is an unforgettable experience.
