Chef Kyle & Trey’s Chow Down!

If you research The Bird Cafe website it reads their A chef-driven concept right on Sundance Square Plaza. Where, the focus is delicious, delectable, seasonally-driven food, craft cocktails, and carefully curated craft beer.

The Bird is split-level restaurant with more than 6,400 square feet of indoor space and 2,300 square feet of patio space looking out upon the new Sundance Square Plaza where your sure to have a special and unique experience!

Chef Driven that is for sure with the new chef taking the reins!

In my opinion, it takes six traits in order to be an incredible chef. It takes creativity, dedication, attention to detail, passion for food, leadership capabilities, and the desire to be the best and never quit. Okay, so seven things actually! These skills separate the cooks from the chefs. Some have all of these skills and in addition to so much more.

About five years ago I met a rising, up and coming chef. I remember to this day walking in and seeing him working on some recipes for new menu items. I noticed he had a clean-cut had a beard and was being extremely diligent with his work. I spoke to him a little bit, introduced myself, and together we talked food for a few minutes. I could tell when I left that his attention to detail, the way he expressed his thoughts on food and the culinary arts that, he was going to be an amazing chef.

Good Day Chow Fans,

Capital Grille wants you to enjoy a great lunch and because life is fast paced they will feed you in 45 minutes. Trey’s Chow Down for lunch loves the Cheeseburger, The French Onion Soup, and the Wedge Salad With Blue Cheese and Smoked Bacon.

You might be surprised with what Capital Grille can do in a mere 45 minutes. Take, for example, the Maine Lobster Roll, served generously on toasted brioche and accompanied by housemade chips. It’s one of many exceptional selections you’ll find on our lunch menu – served at a pace that suits your schedule, with the service to which you’re accustomed.

Did Someone Say Crab?

A crab is shown with the words " national crab day march 9 th ".

Good day seafood lovers,
Everyone in Texas knows we raise beef the word Texas implies BEEF. We’re known for beef, but every once in a while we need some delicious seafood. Some folks eat seafood on the daily! It is unbelievable how many fantastic seafood restaurants we have now in the DFW area. I ventured out to try 10 different “Crab Dishes” in the DFW area in search of some great “Crab Dishes”

A man and woman posing for the camera at a table with food.

Back in the old days deep in the heart of Texas, fresh seafood was hard to come by. Today, things have changed and for the better. Most restaurants have their seafood delivered overnight to serve daily fresh seafood to customers. Some places even get two fresh shipments a day. If you ask chef Jon Bonnell of Waters restaurant and Bonnell’s, he will tell you he communicates with boat captains that catch fish and ship directly from dock to his restaurants back door. Many restaurants NOW choose to have their seafood arrive here fast, fresh and looking beautiful. It’s a must to have fresh seafood! I remember back in the day when we had our restaurants people would always joke by saying, “Seafood is fresh, yea frozen freshâ€. Now a days, most folks know this isn’t the case at all. Restaurants and chefs are way to picky about flavor profiles, freshness, and presentation of the dishes. It has to fresh or they won’t use it!

National Crab Day is approaching and Trey’s Chow Down is delivering you the list for the best crab dishes in the DFW area. These dishes are prepared fresh daily and are unbelievably delicious. We packed a wide variety of crab dishes so everyone can try a variety of goodness. These dishes are affordable and tasty. Make sure to mark your calendars for March 9th National Crab Day!  Be sure and watch Fox Television Channel 4 with Jenny on “GOOD DAY.” Great episode coming up forNational Crab Day!”

STEAK PERFECTION BEST OF THE BEST!

A piece of meat is on the table.

Good Day Steak Lovers,

We are closing out another great year in the good ole USA, and starting a new in 2018. With our website now averaging over 54,000 visits a month I wanted to start the NEW YEAR off with our BIGGEST and BEST foodie article of all time. 12 months in creation, and many miles logged I wanted to write an article about the best steaks I have eaten in 2017. This list will consist of restaurants all over Texas and the U.S.A.

BUT some of my favorites are here in Texas.

A man on horseback herds cattle in the field.
Trey Herding Cattle @ Branding.

Throughout my year of traveling I always make foodie adventures so I can bring our fans the best of everything: Eats, Drinks, Snacks, Restaurants and Chef information!

My family has been in the ranching and beef business for 170 years in Texas, and the restaurant business for 100. We also owned the Quality Meat and Provision Company for 4o years in Fort Worth before we sold out in early 80’s.

As a boy I worked in the meat packing plant, the ranching operations and the restaurants. I would preform all kinds of duties. My grandfather and dad where strong believers that we needed to know everything about the operations. They made us start at the bottom so we could learn all the nuts and bolts of each division.

In the restaurants, I worked the front and back of the house while I preformed every duty possible for education purposes. In the Meat packing operation I worked at every station, and even unloaded whole sides of beef off the trucks. In our ranching operations I performed  every duty there is on cow calf operation. There isn’t much I haven’t done so when I tell you I know beef… believe me. I know a fantastic cut of beef when I see and taste it.

Supporting Local! Frustrated!

A group of people standing in front of a bar.

After seeing the Governments RESPONSE to help the restaurant, service industry and small business I’m truly lost for words!

I still don’t think society and the government understands what supporting LOCAL restaurants really means to our local economies. Restaurants, Taverns, Pubs, and Bars drive our local economy in financial ways that we cannot see on a daily basis. More than 10,000 Texas restaurants have already closed – some temporarily, many permanently, and with business conditions worsening, 30% percent of Texas operators say it’s unlikely their restaurant will still be in business six months from now without additional federal help. Out of those thousands, far too many of them are from right here locally in the DFW area. Remember while for us as customers it may just seem like one less place to grab delicious taco or burger, families are depending on these establishments for their livelihood. Unfortunately, we only notice when it’s too late and the doors are forever locked, and the CLOSED sign is placed in the window.

Restaurants help and drive city infrastructure with the tax money brought in. They create jobs for first-time workers, college students, young people, old people, single moms and dads, and so many others. They support local farmers, ranchers, breweries, distilleries, markets, butcher shops, tradesmen, plumbers, handymen, window companies, cleaning companies, delivery folks, computer folks, marketing, and P.R. firms. Most of these businesses are suffering or even closing, and it’s creating a devastating chain reaction that WILL NOT be corrected anytime soon and its extremely heartbreaking for so many families.

Creative Food, Great Drinks, Live Music Daily: Magnolia Motor Lounge

A group of men playing guitars on stage.

Good Day,

A group of people holding up a plate with two burgers on it.
From Scratch Menu!

Some years back before the Fort Worth 7th Street area started rocking and popping, a little place opened up for business in the southwest corner called Magnolia Motor Lounge. We they opened I thought to my self this is going to be a great place.

Magnolia Motor Lounge, or for the frequent the 7th street area comers, then you’re aware they go by the name “MAGS” for short.

MAGS offers a wide range of national and local artists nightly. This means on any given night there is awesome tunes being played at Magnolia Motor Lounge. They have a wide VARIETY of music from rock, blues, Texas blues, Texas red dirt, and any & all types of music. The atmosphere is guaranteed to be fantastic and the sounds are always great.

Texas Debauchery & More!

Two women are dancing in a neon light.

Good Day Drink With Trey buddies,

Just when you think the Fort Worth West 7th area can’t get any better… BAM! A new fantastic business opens up. Not only is the new place big, bright and rocking, it’s named after Texas. A woman holding up neon signs in front of a bar.WHAT?! You’ve got to be kidding me?

A new place to drink, party, watch sports, eat great food, listen to awesome music and socialize with friends into the wee hours of the night. What would you call a place with a tasty from scratch chef driven menu, strong drinks, big open space, friendly folks and Texas music? I’ll tell you what they call it.

TEXAS REPUBLIC BAR & KITCHEN

Or if you’re a West 7th Street local, TXR will do!

That’s right folks, TEXAS REPUBLIC.

Upscale Southeast Asian Cuisine!

A restaurant with a large covered patio and lights.

Good Day Chow Hounds,

A woman sitting at the bar smiling for the camera.
Eva doing her thing!

Quite some time ago, I was told about Malai Kitchen in Southlake. At first I thought, oh yes another Southeast Asian cuisine place. I’ll get over there when I can. I love Asian culture, the food and the great flavors it provides. Everyone knows how much I love food because… well… It’s my job and my life mission to pursue with a deep passion. I get leads on new places daily and while I do try to never prejudge a restaurant, a chef, or a menu, I sometimes put places on the back burner.

Malai Kitchen has other locations in the DFW metropex so when I heard Malai Kitchen was coming to Fort Worth I told myself, I’ll just wait and try Malai when they open here. I made a colossal mistake not trying Malai in Southlake when I heard about it the first time.

I drove up to the NEW location and saw the big bright colors, the beautiful patio, and the fantastic vivid interior… I was in love. If you know me at all, you know I love BIG BOLD THINGS! It can be flavors, colors, cuisine, clothes and more. My first impression will always be good if it’s bright and bold.
