When Trey’s Chow Down saw that 275 million Americans enjoyed BACON in 2023 I decided to highlight bacon. From the first sentence I wrote about bacon my mouth started salivating and all I could think about was how delicious bacon truly is.
Have you ever eaten a bad piece of bacon? I think not! No matter how it’s cooked, (soft, crispy, medium, or rock hard) bacon is always perfectly delightful.
Ever since 1500 B.C. folks have been eating and enjoying bacon. That’s a long time ago, but it just goes to show you how much everyone loves bacon.
Bacon’s history dates back thousands of years to 1500 B.C. The Chinese were curing pork bellies with salt. Basically, they were creating an early form of what we know today as bacon.
I’m shocked about how long ago bacon was being eaten and was created. I wonder how the first bacon fry went down. Here piggy piggy! Come here piggy piggy! Come over here let’s see if we can fry some of your body parts up? Seems legit to me lol!
When you talk about Texas BBQ and all it offers then you have to mention Dayne’s Craft BBQ. They’ve won so many awards and accolades that it’s impossible to list them all. I’ve been following them since they began and I’ve watched them as they’ve climb their way to the TOP of the Texas BBQ peak. The success they’ve enjoyed has come from blood, sweat, tears, hard work and dedication to their craft. All the smoked meats, pork, sausages, sides, sweets, and burgers are simply RIDICULOUSLY DELICIOUS. They’ve even prepared AND SMOKED WHOLE HOGS where ever bite was PORK-O-LICIOUS.
Let’s talk burgers! They won the Cowtown Burger Showdown in Fort Worth at RIVER RANCH two years in a row. Dayne’s OG SMASH BURGERhas got a flavor profile so delicious that everyone wants it. It’s cheesy smash burger deliciousness that’s truly unforgettable. It’s become a TEXAS BURGER LEGEND running through Texas like a run away freight train.
Their story is great one: Dayne Weaver started his journey in Texas barbecue as a backyard smoker enthusiast. His father-in-law left a small kettle grill in his backyard in 2017, which he converted into a mini-smoker. He threw a brisket on and was immediately hooked. He began smoking meat every weekend; however, barbecuing is an expensive hobby. Dayne’s wife, Ashley, told him that if he was going to continue to cook regularly, he needed to find someone to buy it. That’s how “Dayne’s Underground Barbecue” was born.
Have you ever seen pictures of a place so dreamy, beautiful, peaceful and picturesque you think to yourself, that can’t be real. It’s just not possible – there’s no way a place like that can exist in today’s world. Well, we discovered a place just like that in Lake Martin, Louisiana; a place so unbelievable we just wanted to pinch ourselves. It is simply known asMaison La Madeleine.
I’m going to tell you the rest of this fantastic story and how it all began so you can enjoy this incredibly unique travel destination that is rich in history, cozy vibes, southern hospitality, and food so delicious you will want to lick your plates clean after every meal.
This story starts back in 1860, when Jean Pierre Cenac walked to Bordeaux from the foothills of the Pyrenees and arrived in Algiers, Louisiana on Christmas Eve. He set up shop, got to work, and started making family history. Fast forward about 160 years and today Proprietress Madeleine Cenac and her husband Walt Adamsown and operate one of the most incredible bed and breakfast travel destinations in the world: Maison La Madeleine. It’s located in the heart of the Atchafalaya Basin, adjacent to the Nature Conservancy’s 9,300-acre Cypress Island Preserve in Lake Martin, Louisiana.
Established as a Bed & Breakfast in 2005 by its owner Madeleine Cenac, it’s been a successful operation for going on 17 years.Madeleine and her family oversaw every little detail and put in years of blood, sweat and tears restoring a beautiful rustic 1840’s southern cottage. She’s extremely detail-oriented and every single item about the restoration, right down to the floor nails, was kept authentic and true to the times. As I walked around studying the details, the beauty, and soaking up the history, I was in a trance. It was so convincing that one would think they were actually back in the 1840’s, except for the modern conveniences.
They have also won accolades from the travel and tourism industry, magazines, programs and of course the tourists who are lucky enough to visit. They offer incredible service, history, fantastic stories,delicious meals, live music with a supper club series, incredible French Creole surroundings and accommodations fit for kings and queens.
I can’t begin to describe the feeling you get as you drive down the beautiful tree-lined roads on the way to the cottage. Your heart will smile because it’s absolutely breathtaking! The sights, smells, sounds, colors, and animals create a vision like you’re driving into a movie scene. When you finally arrive and step out into the beautiful world that is Masion La Madeleine, you will be in awe of the surrounding landscape and happenings.
The main house, or historic structure – a circa 1840 French Creole cottage – was moved to its location on Lake Martin in St. Martin Parish from property on the Vermillion River near Perry, Louisiana in 1997. Painstakingly restored and authentically furnished to its original grandeur, it serves as the centerpiece of the Bed & Breakfast. This is one of less than 50 such surviving 19th Century structures in the Acadiana Parishes.
When you enter the home, you get a warm cozy feeling that I can’t describe, except to say it’s pure bliss. From floor to ceiling and wall to wall its full of furnishings, artwork, and historical artifacts that would make any historian green with envy. My eyes and senses were on overload as I enjoyed it all – especially once I completely understood how much detail, hard work and dedication went into every aspect of this home and its surroundings.
Just when you think you’ve seen it all, you get a key and start upstairs to your living quarters. The stairs creak and the wood pops as you make your way up the narrow staircase. As you slowly push the door open you see the beautiful hallway and rooms decorated so perfectly. It’s like you’ve entered a fairy tale. There are two bedrooms, complete with sitting areas and even a hidden sleeping nook for children to enjoy. Accompanying this is a little kitchen area and a wonderful cozy bathroom. The entire living quarters is inviting and warm, with history about the family and Maison La Madeleine.
You can stroll around and enjoy the unique, colorful, and beautiful landscape surroundings. When you’re done you can relax on the big front southern still pouch, or in the back by the river. Myfavorite place was the old Jesus Bar, which is behind the cottage main house. They have an incredible outdoor kitchen and seating area, but the Jesus Bar is where all the good stuff happens! You can also choose to enjoy a private cooking class from professional Cajun-Creole chefs who live close by and are some of the bests you will find. I would highly recommend a cooking class because it’s educational, fun, and packed with delicious eats.

Trey’s Chow Down on our MEETS, EATS and SWEETS Tour Road Trip’in the USA for deliciousness. Today we’re inKansas City MOfor some OLD SCHOOL smash burger perfection. It all began in 1937 when Town Topic Hamburgers opened for business with a very small, cozy building that’s still in use today.
In Kansas City, a little white diner named Town Topic Hamburgers opened unceremoniously on 24th and Broadway and began selling hamburgers for 5 cents each. It was opened by Claude Sparks, who at the end of his first day pocketed a whopping $21.00. It’s more than 75 years later and Town Topic is still selling hamburgers by the bagful. They still cook them the same way, with grilled onions and a steamed bun. They also have the same full breakfast line they’ve always had, and it’s all cooked fresh to order. In fact, the downtown diners haven’t changed a whole lot since the early days.
I really enjoyed this restaurant because it’s cozy, with an old school feel you notice right when you pull up. I watched folks standing around outside, waiting for chance to grab a seat and enjoy old school perfection. We were among the group, patiently waiting for our chance at one of those TOWN TOPIC SMASH BURGERS.

A few months back, while we were “Road Trip’in” for deliciousness, we had to check out a place we heard about in beautiful Fredericksburg, Texas. As we continue on our MEETS, EATS & SWEETS Tour 2022, we headed to the small community of San Juan Capistrano, California. This is an extremely cozy and beautiful town located in Orange County, California, along the Orange Coast. San Juan Capistrano was founded by the Spanish in 1776 when St. JunÃpero Serra established Mission San Juan Capistrano. It’s a beautiful place with friendly folks and now offers some of the BEST BARBECUE in the state of California.

I could smell the aromas lofting in the air a block away, and my mouth started watering as we approached. When we pulled up, we saw the beautiful surroundings with the palm trees and landscape dancing with the wind. What an amazing atmosphere to enjoy some delicious barbecue.
Heritage Barbecueis a Texas-style barbecue joint offering a rotating menu of home-made sides, succulent smoked brisket, beef ribs, and pulled pork. They also offer juicy, flavor-loaded tri-tip, smoked chicken, turkey, K.C-style burnt-ends, and a variety of other proteins, even house-prepared sausages.
They have the ordering process down to a science. It’s easy and organized, and the line moves like a finely tuned Swiss watch. We ordered and then enjoyed the fresh air in the unique and cozy outdoor atmosphere. They have four massive barbecue pits on display that are constantly billowing smoke in the California sun while you sit and enjoy your barbecue. The pits are beautiful, offering a variety of colorful patinas that happen naturally in the barbecue smoking process.
Have you ever taken a bite of something so delicious that you thought to yourself, “I have to tell someone about this!” I’m sure you have because we all feel that way sometimes. It doesn’t matter if it’s savory, sweet, or both, we just want to tell someone about how perfect a dish was. After traveling around in 2021, eating and visiting with chefs and restaurant folks, I had an idea. I wanted to spread a little deliciousness among my friends; I wanted to share with everyone the BEST DISHES I ATE in 2021.
2021 was our most successful year at locating creative chefs and delicious dishes. We traveled through 10 different states, logging our most miles ever and visiting a record number of chefs and restaurants. I wanted to highlight some of the most unique and delicious dishes you should try in 2022. These are my top restaurants with dishes, and there’s a big variety so there’s something for everyone!
I enjoyed visiting and eating with some of the best chefs and restaurant folks in the business. Each dish has been carefully chosen and is a chef-driven dish prepared by the best! They only use fresh ingredients, vegetables, and spices to create some bold, modern flavor profiles that everyone will love. Most of the eats are simple dishes that are prepared with passion, love, and creativity. Remember, a simple dish is sometimes the most difficult to facilitate because all parts must be complete perfection. I believe that in most cases simple is better because it gives each ingredient that culinary jingle to create deliciousness.
Last week Trey’s Chow Down took another Road Trip for deliciousness as we headed out to beautiful East Texas to the town Paris, Texas. Paris is a wonderful and beautiful city, complete with a downtown country feel and beautiful views. Paris is in Northeast Texas at the western edge of the Piney Woods. It’s in Lamar County and as of the 2010 census, the population of the city was 25,171.
We made the trip to Paris because someone told me about a little food trailer slinging some of the BEST BIRRIA TACOS, PIZZAS, and RAMEN in Texas. If you follow me, you know we live to discover deliciousness for our followers. I’m telling you this an amazing find!
What is Birria? Let me explain! Birria is a Mexican dish from the state of Jalisco. The Spanish term “birria” is used to describe immaterial things without value or quality. It is a traditional ancestral soup or stew made from a combination of chili pepper-based goat meat adobo, garlic, cumin, bay leaves, and thyme, and cooked at a low heat. After cooking it’s usually simmered for about 20 minutes, then blended in a high powered blender until nice and smooth. An authentic Birria Taco, Pizza or Burrito is served with “Consome de Birria” sauce and it is #StupidDelicious.
I’ve been excited and wanting to create my list of top fried chicken joints for over two years, but like fried chicken itself, you just can’t rush perfection. We’ve been enjoying fried chicken all over North Texas from casual, fast casual and fast-food joints and I’ve finally decided it was time to let the feathers fly and expose what I consider to be the BEST fried chicken in the North Texas area.
We have many places selling various forms of chicken nowadays, so I want to be clear about what I mean when discussing fried chicken. I’m talking about fresh, bone-in chicken fried to GBP – Golden Brown Perfection. Wikipedia defines fried chicken as: “Southern fried chicken,” also known simply as fried chicken, is a dish consisting of chicken pieces that have been coated with seasoned flour or batter and pan-fried, deep fried, pressure fried, or air fried. The breading adds a crisp coating or crust to the exterior of the chicken while retaining juices in the meat.
Growing up, we served fried chicken at some of our Chapman Family Restaurants and it was very good. Under our restaurant umbrella we also owned a Churches Fried Chicken franchise, and this is where I truly learned the preparation techniques and the time it took to cook and deliver fresh fried chicken. There really are no shortcuts in the process – if you try and eliminate a step, you’re asking for subpar chicken. Preparing fried chicken isn’t very technical, but I strongly believe that simple cooking processes are sometimes the hardest to pull off. The simpler the dish, the less places there are to hide from subpar preparation.
If you follow me, you know how I feel: Nothing goes better with a delicious meal than family, good friends, and a great story. That being said, let’s talk fried chicken!
When I was a young buck there was a lady cook that went by the name of Mercedes. She would cook for folks around Fort Worth at your house like a caterer would today. She also did other things for folks but her cooking was always fresh southern perfection. She cooked many dishes, but she had two dishes that I loved. I’m sure you can guess one was southern fried chicken ““ true skillet southern fried chicken from a cast iron skillet. The kind of chicken where every bite is succulent, flavorful, and the chicken juice just runs down your chin and gets all over your grubby little fingers. I can promise you the term “FINGER LICKING GOOD” came from dedicated hard working southern ladies like Mercedes that wouldn’t ever cut corners. Simply put, it was her way or no way in the kitchen!
I will never forget the time I was outside under some big trees and I could smell the chicken cooking. I ran inside and told her I was hungry, and not just once. It was probably more like 10 or 20 times; I was like a parrot on crack when it came to food. Even as a child I had little patience, and when it came to Mercedes fried chicken I had even LESS. I kept on badgering her and she finally had enough. She turned and kicked me out of the house and locked the front door. She said, “I’ll open it soon as I’m finished cooking my chicken, young man!” I was so intent on eating that chicken and I was worried somebody else was going to get it before me. I went around and climbed on the window seal and started tapping on the kitchen window frame and glass. Let’s just say she wasn’t happy, but she finally finished that incredible chicken and called me inside to eat.
I sat down at the table and she gave me two breasts and a leg. I got a big helping of her home-made mashed potatoes, prepared with fresh potatoes, butter and smothered in white cream gravy. The steam was bursting off the taters, and the fried chicken aromas were unforgettable. Every single bite of that chicken was savory, flavorful, succulent perfection. It was exactly like that every time she prepared it! It never varied in flavor or deliciousness and that’s why I’ve never forgotten how incredible her fried chicken dinners were.
Fried chicken has to be prepared fresh, hand-dipped, and coated with a delicious signature batter that is always the same. CONSISTENT. Mercedes used a real cast iron skillet and only cooked three pieces of chicken at a time. She would make her own batter, then hand dip the fresh chicken one piece at a time. Never in a hurry, and she never changed her process. She was patient and passionate about the cook and knew there were no short cuts to achieve the deliciousness everyone loved. I truly miss that woman and her chicken. She meant a lot to me and I always respected her and what she could cook in that kitchen. Man, I can still smell that meal now it still makes my mouth water.
The point of the story is to demonstrate how much I love fried chicken and where my passion for the southern dish derived from in my child hood. While we were traveling around enjoying fried chicken, I always keep Mercedes in the back of my mind.
I hope you will enjoy some of the fried chicken places on my list because I sure did. I had a Best Chicken Dish Special on ABC two years ago and I featured a couple of these dishes on that special. I had a friend in Dallas telling me about Mike’s for over a year before we tried it. I’m just sorry I didn’t take his advice sooner. I get suggestions and recommendations daily – on average about 3 to 4. I should have acted on this one sooner. Mike’s is located in a laundromat building on Maple Ave. in Dallas. Yes, I said a laundromat! Mike’s is slinging what I consider the be the BEST fried chicken in North Texas. Every aspect of their chicken is perfect and it’s consistently perfect every single time. The preparation, cook, and presentation is everything I look for in fried chicken: it’s savory, crispy, succulent, flavorful with a hint of salt and a load of deliciousness. Simply put, they should rename Mike’s Chicken and call it MORE. Because more is all you will want with each juicy bite of chicken. It’s R.I.D.I.C.I.L.O.U.S. – ridiculously delicious that is! Don’t forget Mike’s buttery house biscuits because they are some of the best you will ever put in your mouth.
Unfortunately, as I write my article, Drew’s Place has decided to close temporarily. They will reopen – just follow their social media and watch for notifications on their status. Located in Fort Worth on the west side off Curzon Street, they have an awesome old school atmosphere. I had to include Drew’s Fried Chicken because it’s so perfect and delicious every time. They prepare using fresh chicken and house batter to fry their chicken GBD Golden Brown and Delicious every single time. It’s savory, loaded with great flavors, slightly crispy and has a unique flavor profile that screams Drew’s. It is some seriously delicious fried chicken. You will be sucking your fingers to get every last drop of the flavor-loaded chicken juice. Don’t forget some house-prepared sides, greens or deliciousness. Everything from Drews place is a trip to Deliciousville! They’re also some of the BEST people you will ever meet!
I like this chicken so much I featured it on my Best Chicken DISHES special on ABC Channel 8 a few years ago. They are located in Deep Ellum in the heart of the arts district. I love that name Brick and Bones, kinda catchy! Classified as Mexican Fried Chicken, it’s something you’ve never tasted before. They will tell you it is a throwback bar in Deep Ellum focused on craft Mexican fried chicken, great cocktails, and curated spirits. They started in the kitchen, where they cooped up and built a menu centering around Mexican-inspired fried chicken, which is their specialty! Prepared with fresh chicken and over 15 different fresh Mexican spices, it’s stupid delicious. The first time I put this chicken in my mouth I said, “S!@#$%^& W.T.F.” because it was so damn delicious! I ordered a second helping because one just wasn’t enough. If you love lip-smacking savory chicken – some of the BEST in North Texas, then head over to see them at B & B. Tell’em big Trey sent you! Oh and don’t forget the Mac-N-Cheese with your fried chicken.
I know this is considered Nashville Hot Chicken, but I don’t care because it’s dam delicious. Gus will say it’s simply the best-fried chicken on the planet”¦but you won’t know what they mean until you try a piece or two yourself! I’m telling you: this spicy, crispy fried chicken will make you have chicken dreams while you sleep. I have the same dreams and that’s when I head to Gus’s in Fort Worth. The chicken is savory, light, crispy, and has some heat that you will fall in love with. The legend is that someone asked Gus Vanderbilt of Gus’s World Famous Fried Chicken for his fried chicken recipe and he simply replied, “I ain’t telling.” They marinate it overnight, put a little of this on it, with a dash of that, and then toss it in the fryer. By the time we get the finished cluck cluck, it’s fresh, hot, a little spicy, with a delicious crunchy skin. I can’t ever stop eating the stuff. All I know is Ol’ Gus knows what the hell he’s doing. I’m sure he won’t ever turn loose his legendary chicken recipe. Fortunately for us, you can eat as much as you can buy. You better take a bib, some wipes, and get some chicken to go while you’re at it! It’s a trip straight to chicken deliciousville.
Located on Upper West 7th in Fort Worth, Chef M.T. is one of the original celebrity chefs in the DFW area. He’s been slinging deliciousness in Texas for decades and always uses farm-fresh products to create big, bold flavors that everyone loves. His restaurant is very cozy, with a classy and friendly atmosphere. His creative secret recipe for Fried chicken is no exception. It is loaded with savory, crispy deliciousness. It’s hard to put the chicken down until it’s all gone. Always served HF&D Hot Fresh and Delicious! If you’ve haven’t visited Chef M.T. on Upper West 7th Street then you need to be sure and make that trip. Tell’em Trey sent you and you want some of that HF&D Fried Chicken. You can also get curbside or TOGO if you like. Just get you some!!
I’ve been banging on Lisa’s chicken doors for over a decade, and banging hard! While they are considered to serve simple southern fried chicken, remember that I said simple dishes are the hardest to pull off. Lisa’s just does it right! Using fresh chicken and hand-battering with Lisa’s house batter and then dropping in the fryer, it’s always perfect chicken! I have Lisa cravings all the time and now I order it straight to my house. The flavor profiles with Palmers secret chicken time tested receipt is savory deliciousness that you will really enjoy. Back in the year 1987, Mr. Williams opened his first fried chicken restaurant in Dallas. Since then they have grown to multiple locations all over the place. I started eating William’s back in the late 80’s and have enjoyed them ever since. Starting with only fresh chicken, they’ve stayed true over the years using the Williams Family secret recipe to create savory, fresh fried chicken deliciousness. It’s always consistent and carries that southern fried chicken deliciousness stamp! If you love authentic southern fried chicken, you need to chow down on some Williams.

They offer a cozy family atmosphere with awesome service and delicious southern fried chicken with unlimited family shareable sides. Babe’s will tell you that, “They wanted a sit-down restaurant where people really feel at home. Babe’s is a casual place where you’ll feel comfortable in your blue jeans or cutoffs. Where your neighbors wait on you and your whole family.” That pretty much sums up Babe’s, except to say they are slinging some of THE BEST fried chicken in Texas. It’s always prepared fresh, hand-dipped and with Babe’s passion for savory, crispy deliciousness! If you haven’t been to a Babe’s you need to head over there and chow down. WOW!What a year 2020 was for the restaurant, food, and culinary world. In my five decades in the restaurant business, I’ve seen disasters of all types and nothing comes close to the devastating effect Covid-19 had on our economy. Restaurants, chefs, pitmasters, and restauranteurs had to make big changes if they wanted to survive the pandemic. Nationwide, we lost over 251,000 restaurants forever and 2.5 million restaurant jobs at the latest estimate.The good thing is thatNOWwe are on the mend and theTexaseconomy is in full giddy-up mode! This is why it’s so important to support local restaurants to keep us in giddy-up mode.
Even though things were crazy due to Covid-19 we still worked hard reporting on food and hunting down the best burgers we could locate in North Texas. The pandemic allowed us plenty of extra time to chow down on some tasty burgers; it also allowed burger creators time to come up with some new delicious and creative burgers for all of us to enjoy. If you follow me, you know how much I enjoy a great and tastyburger. This is our seventh year for the BEST BURGERcontest in Texas and I’m excited to tell everyone about my delicious burger discoveries.

I don’t have the newly updated numbers of burgers sold in 2020 during the pandemic (and it would be an oddly skewed amount), so we are using the last updated numbers. Anational research company states that we sell 6.48 million burgers a day, and around75 burgers a second!What? Yes,75 burgers a second! This roughly breaks down as 4,500 burgers every minute, 270,000 every hour, 6.48 million a day, and 2.36 billion burgers a year. A worldwide research study states we sell 50 billion a year worldwide. 50 Billion a year that to me is shocking, but I know how many folks just love a succulent, savory, and delicious burger.
