I took a ride over to the NEW BRIX Barbecue located on South Main Street in Fort Worth, Texas. I was very impressed with the new operations. Homemade smoker, rescued dog, man with a crazy passion for texas style smoked meats = brix barbecue
In 2017, Big Trevor got his first smoker as a birthday gift from his parents after moving to Texas from the Chicago region and falling in love with real Texas Barbecue. He would stay up overnight to barbecue and stumble into work with samples for friends and colleagues. After a few months gone, and a bigger waistline – they convinced him he has what is takes to compete with the ‘big dogs’ in Texas Barbecue. Fast forward to early 2018, when he rescued a Boxer-Terrier mix, Brix, that had such influence on his life, he rebranded and named his barbecue business after him.
Big Trevor is a transplant that has fused his love for food with Central Texas Style Barbecue. Most of the recipes are simple and let the meat shine. There’s nothing to hide, and he’ll share all of his secrets, because the one thing no one can match is his passion for smoking meats to perfection. His love of food comes from his mother, Mama Sales, where her first two ingredients are always butter and love. Big Trevor doesn’t use much butter on his barbecue (the sides are another story), but that first bite of brisket will unveil a great deal of love. Just don’t forget to save the bones for Brix.
DALLAS – August 9, 2023 – The final countdown to three of the most coveted food titles in all of Texas begins. The State Fair of Texas is proud to present the 19th Annual Big Tex® Choice Awards finalists.
On Sunday, August 27, three winners will be crowned in the categories of: “Best Taste – Savory,” “Best Taste – Sweet,” and “Most Creative.” The competition began in early July with an impressive 57 entries represented by 37 concessionaires. Of those entries, 36 were selected as semi-finalists. Each entry was evaluated on four Fair-food elements: uniqueness, creativity, presentation, and taste. After some tasty tests and delicious dishes, votes were cast, and the results are finally in! Now the top 10 finalists must present themselves to a prestigious panel of celebrity judges in hopes of securing one of the top spots. If your favorite entry did not make the final cut, fret not, concessionaires may still choose to introduce their creation at their stand as a new food during this year’s Fair.
Without delay, the State Fair of Texas is happy to announce the 10 finalists that will be competing for the titles of “Best Taste – Savory,” “Best Taste – Sweet,” and “Most Creative,” in the 2023 Big Tex Choice Awards competition.

If you’re like us and you travel a lot, sometimes when you reach your destination you get a very pleasant surprise. That’s what we got when we rolled into the NEWLY RENOVATED Renaissance of Austin, located in North Austin, Texas. We were just blown away from the front door to the outdoor entertainment paradise.
The hotel went through a BIG and COMPLETE restoration, modernizing the guest rooms and suites. All of the accommodations are simply stunning, colorful and vibrant, featuring stylish décor, local artwork, and thoughtful amenities. Everything is TEXAS chic, and represents Texas music, fun and an active life style. From the hanging guitars to the cattle and livestock artwork, it’s TEXAS BEAUTIFUL, but also extremely inviting and very comfortable to enjoy a long weekend.
Let’s talk about all of the incredible outdoor entertainment areas. They have four different patio areas on different levels, complete with fire pits, lounging areas, swinging chairs, games… all shaded with trees and landscape. A great feature was the mist machines in the trees, keeping you cool when you’re not enjoying the NEW pool area. Speaking of which, they have two pools. Yes, two pools! One is located inside with a hot tub and the new pool is outside, offering a sundeck, hot tub and plenty of lounging areas to enjoy the outdoor life. They’ve added a fantastic music system to enjoy some good tunes with fresh craft cocktails so you can chill and get lost in time. When you spend time outside it’s like your miles away from the big city, even though it’s right there. The outdoor area is made for relaxation and good times, which allow you to recharge and enjoy life and that’s exactly what we did!
When you get hungry you can enjoy some fresh poolside snacks, or some chef-driven chow from the KNOTTY DECK & BAR. Lunch, brunch, dinner, and snacks are all very delicious and the offerings always served #HF&D hot, fresh and delicious. The fresh craft cocktails are prepared using only the freshest and finest ingredients to create some creative and tasty cocktails. All the food we tried was great, and the service was first class.
If you’re traveling to the Austin area, I would HIGHLY recommend booking a room and staying at the NEW RENAISSANCE of AUSTIN. You’re going to fall in love with this amazing property. They’re a NEW, officially APPROVED, Trey’s Chow Down Travel destination for all travelers to enjoy.

Trey’s Chow Down Travel spends a lot of time in New Orleans. For over a decade we’ve been staying at the beautiful Omni Royal Orleans Hotel, located right in the middle of the French Quarter. It’s a historic hotel filled with fantastic New Orleans stories and folklore. The interior is beautifully decorated in a southern style, with stunning ornate marble and artwork.
It’s simply a fantastic place to stay and the central location makes it perfect for enjoying the historic French Quarter. From the world-famous Rib Room for the weekend brunches and dinners with live music, to the early morning room service, awesome rooftop pool with stunning views, and wonderful New Orleans style room choices. The hotel staff is always extremely nice and very helpful with local hot spots, events and happenings.
Very much like the City of New Orleans, the history of Omni Royal Orleans Hotel is one marked by a triumphant struggle to overcome life’s many tribulations. The hotel itself harkens back to the early 19th century, when New Orleans was rapidly becoming one of the nation’s most important ports. Thousands of merchants moved their products into the city, given its relative location at the mouth of the Mississippi River. All sorts of steamboats and sailing ships docked in New Orleans’ bustling wharfs, delivering such goods like sugarcane and cotton. In the 1830’s aspiring hotelier James Hewlett decided to use the location for the site of a grand hotel.
Hewlett, a Creole descended from the city’s black and French populations, had long yearned to own a magnificent holiday destination that would rival the St. Charles Hotel in its eloquence. He hoped that this facility would provide a meeting place for people of all backgrounds to congregate and relax. Hewlett broke ground on the project in 1838, recruiting architect Jacques Nicholas Bussiere De Poilly to oversee the project. De Poilly had been specifically tasked with recreating the sophisticated aura of Paris’ Rue de Rivoli inside the building. Called the “St. Louis Hotel,” it took the two men five years to complete. Part of the delay was the result of a massive fire that compromised the entire layout of the building. Crestfallen, Hewlett and De Poilly had to start rebuilding the structure nearly from scratch. But when the hotel finally opened in 1843, it stood as one of the most glorious buildings in downtown New Orleans. Its opening ceremony was attended by some 600 guests who quickly scattered throughout the hotel’s three luxurious floors.
After World War II, a group of individuals led by Edith and Edgar Stern started to discuss the prospect of renovating the St. Louis Hotel as part of a large push to revitalize the entire French Quarter. After nearly a decade of deliberations, the Sterns and their allies were finally ready to finance the construction project. They hired architects Arthur Davis and Samuel Wilson Jr., to fully rehabilitate both the interior and exterior layout of the St. Louis Hotel. What Davis and Wilson managed to achieve was nothing short of miraculous, as they fully recreated the building’s grand Renaissance Revival-style architecture. Debuting once again in 1960, the hotel quickly resumed its place as one of the city’s great Grand Dames. It attracted many famous celebrities and politicians, including Muhammad Ali, Paul Newman, and even Lassie, the dog. The Stern family eventually sold the location to Aetna in 1980, which in turn, transferred it to the Sonesta Corporation.
Omni Hotels then acquired the lease in 1986, operating it as the “Omni Royal Orleans Hotel.” Today, Omni Royal Orleans Hotel is owned and operated by Omni Hotels & Resorts. A member of Historic Hotels of America since 2010, Omni Royal Orleans Hotel is still a place to see and be seen in downtown New Orleans.

As we travel the USA in search of creative chefs, tasty eats, savory sweet treats and unique travel destinations I’m still shocked at what we discovery sometimes. What we discovered last month in EAGLEPASS, Texas was something so big and so delicious it set a record for us. Texas is full of crazy and delicious eats and I know this so I shouldn’t be shocked at my unusual discoveries. But I still am because I’m passionate about discovering delicious destinations.
THE WAGON WHEEL GANG in Eaglepass, Texas is slang’n the BIGGEST, most authentic Chicken Fried Steak in TEXAS! It’s also one of the BIGGEST I’ve discovered in 26 states in the USA.
Let me explain were Eaglepass is located. We’re deep in South Texas, all the way to the TEXAS-MEXICO BORDER. It’s the county seat of Maverick County in the state of Texas. Its population was 28,130 as of the 2020 census. Eagle Pass borders the city of Piedras Negras, Coahuila, Mexico, which is to the southwest and across the Rio Grande.
Here is where you will find the BIGGEST chicken fried steak I’ve ever seen. You won’t believe how big it is until it’s sitting in front of you. It takes up an entire large pizza platter! In fact, it’s so big that it’s SERVED on a pizza platter. WOW! Weighing in at five pounds It’s truly Texas-sized.
When you take your first bite, you’ll realize what CHICKEN FRIED STEAK HEAVEN really is. The outside shell is slightly crunchy, and the inside is tender, juicy, and flavorful. When we heard that the best PIES in the South were just a short ride to Arkansas, you know what had to do. We dropped the hammer and headed out for some of the BEST PIESin the USA.
CHARLOTTE’S EATS AND SWEETS has been awarded BEST PIES in the south by Southern Living, Best Pies Arkansas, Food Network, and a host of other media outlets. I was so impressed with what I read in my research that I couldn’t wait to make the trip to meet them and try their fresh pie deliciousness.
Often hailed as the best coconut pie in the South, this main attraction still brings crowds to this tiny shop on Main Street. It’s easy to find and located just east of northern Little Rock. Pie and cake lovers will line up an hour before the doors open at 11 AM, and you better be ready because it’s hard and fast. Smart diners know to reserve their slices early because they’re in high demand. It’s simply a bonus that the SANDWICHES are very delicious too!
I couldn’t believe the number of pies they still make fresh from scratch every day. Their staff is so nice and helpful, and they have that sweet southern attitude and big smiles. The atmosphere is all Southern old-school decor and makes you feel right at home as soon as you walk through the door.
THE PIES ARE ABSOLUTELY INCREDIBLE! Honestly, I’ve never tasted pies and cakes so flavorful. Each bite I took was better than the last. They were so good I couldn’t help but make noises; folks kinda looked at me funny, but I paid them no mind. I was smacking, moaning, and licking my lips because I’ve never had pies that delicious before. There is just something about Charlotte’s Sweets. If I had to guess, it’s all the love they put into the process.
If you’re looking for something new or just want to try some of the BEST PIES, CAKES, AND SWEETS you’ve ever had, I would highly recommend you take a ride over to chow down. Bonnie’s is a family operation and they work hard to make sure everything they serve is fresh, warm, and prepared with love. They specialize in some of the BIGGEST treats in Texas, like their five-pound fritters, five- and ten-pound cinnamon rolls, Texas donuts, and more. I’ve had them all and they are truly unforgettable. It’s worth the drive for this deliciousness! Bonnie’s Donuts is located in League City, Texas – just a short drive from Houston. The PIG, as I call it, specializes in Texas BBQ, fresh sides, burgers, desserts and NOW one of the BIGGEST BURGERS in TEXAS. It’s the new MOAB (Mother of All Burgers); It weighs in around 2.5 lbs. fully loaded. It’s a MASSIVE brisket smash burger topped with their house-made BOOM sauce. It comes as a 1-pound or 2-pound option. It’s a MONSTER! The burger is actually very flavorful and I love the BUN because it’s unique: soft on the inside, and flavorful with each bite. The meat is so juicy it was literally dripping all over the place. You might say it has that DRIP of deliciousness.
I’m not kidding you! It’s Massive. It’s Delicious! I DARE you to try it!
Have you ever dreamed of a four-pound taco? Me too, and I’VE FOUND IT! The El Jefe Taco is a jalapeno cheddar tortilla loaded with taco beef, chorizo, and all the fixins’. I even had the lettuce drip going on with each bite I took. Be sure to get their queso and try the tablitas en fuego as well. These are Texas-sized dishes that are loaded with deliciousness.
WOW! What a breakfast sandwich! Weighing in at over one pound, the BIG Texas Chow Down. It’s prepared with a fresh house Texas waffle that makes up the top and bottom of the sandwich. The Wagon Wheel is family owned and operated and is local favorite restaurant. They offer delicious Texas BBQ, country fried steak, and wood-fired calzones that are to die for. Folks drive from all over Texas to try them. They’re so big they use a pizza pan (not a plate) to present the items. TEXAS SIZE is an understatement. It looks like a small sky scraper sitting on the plate. The sandwich was not only massive, but also packed with deliciousness. You will love this sandwich! It’s served only Mon-Fri for lunch.

It’s prepared with one pound of fresh, authentic NEW YORK pastrami piled high on fresh rye bread. You can get it anyway you like want it: sauces, bread, everything. Your Sammy, your choice! It’s a donut round up at Round Rock donuts! They’ve been slang’n some of the best and world’s largest donuts since 1926. Their donuts are famous for their orange hue — a byproduct of using fresh eggs. More than 2,000 donuts are hand-rolled, cut, fried and iced daily at the bakery. I wanted to still highlight this BIG TEXAS dish because it’s so impressive. The Black Ship Little Katana Fresh Sushi Boat. The boat is filled with various sushi options of your choice, and it has plenty of choices. My best judgment is it weighed over two pounds when I picked it up. Everything in the sushi boat was so tasty and fresh. We really enjoyed each piece of sushi offered in the boat; it was massive and two of us couldn’t finish it. A seaside boat of sushi deliciousness!
I have to confess something to each of you. I’ve had dreams about the bacon dish at Del’s. Oh man, there’s nothing like naughty bacon dreams folks. It’s the THICK-CUT NUESKE’S BACON AU POIVR served with a Bourbon Molasses Glaze and a side of deliciousness. Oh, the food gods are shining down on Del Frisco’s for this bacon dish! By all means, this is so good it should be illegal. The succulent bacon flavor just rolls across your tongue and sends your taste buds into full mode overload. Don’t be surprised if you have to wipe your chin after each juicy bite. A true trend sitter and it’s under 20 bucks, ladies and gentlemen.
I discovered a NEW Korean/American fusion burger concept that is slinging insane burgers! K-POP Premium Burgers created by the passionate Chef Kevin Lee and his wife Jenice Lee located in The Colony, Texas. The burger profiles are truly unique. It’s where Korean meets American to create some of the most delicious fusion burgers I’ve eaten, and I’ve eaten a bunch. Chef Kevin Lee creates and prepares all the sauces in house daily and only uses fresh ingredients to create big, bold, Korean/American delicious burger flavors you can never forget. The meat patties are cooked to HF&D (Hot Fresh and Delicious) They have those flavor loaded crusty edges from the flat grilling process that I’m in love with. This is all coupled with a Texas-sized batch of fresh waffle fries, topped with garlic sauce and fresh parmesan cheese. When I say you’ll never forget, I mean NEVER.
Trey’s Chow Down LOVES ROAD TRIP’IN TO EL RINCON for the BIG PHAT 2.5 Pound Burrito. The Texas size burrito is prepared fresh to order using only fresh ingredients and vegetables to create 2.5 pounds of BURRITO DELICIOUSNESS. The El Gigante Burrito fresh grilled steak, charro beans, fresh bacon, grilled onions, peppers, tomatoes, Mexican Rice, sour cream, guacamole, spicy Serrano sauce, and topped with chili con carne, and house prepared queso. The burrito was savory, meaty, chessey, flavorful, loaded and PACKED with DELICIOUSNESS. GO get it folks. I double dare ya!

It’s the individual layers in their doughnuts that make them so special – Parlor dough is layered with butter, making it flakier than the average doughnut. Beyond their amazing dough, they work hard to offer an incredible selection of over 20 flavors. Because everything tastes better with a little background, here is the story of Parlor’s Doughnuts…
For centuries, the “parlor” was the special room in the house where people came together to talk and where exceptional things happened. It was usually the best-furnished room in the home where families could comfortably receive their guests.
While the origin of the doughnut can be traced back to the early 1800’s, their popularity grew during WWI when volunteers (known as Doughnut Lassies) prepared doughnuts and coffee for soldiers on the front lines. The doughnuts provided comfort, a brief reprise from battle, and reminded them of home.
Parlor Doughnuts was founded by Darrick Hayden, in partnership with Josh Tudela, in February of 2019. Darrick traveled the states extensively with his son’s band for several years. During those years, Darrick would seek out the area’s best doughnuts and coffee. His appreciation of good doughnuts grew, as his son’s appreciation for great coffee grew. With his son Noah, the two launched a coffee shop in 2015 named Proper Coffee, which flourished, and gave birth to the concept of Parlor Doughnuts.
The concept for Parlor Doughnuts grew out of the Hayden’s travel, exposure, and the desire to create a new path for the doughnut experience. Layered dough was the clear choice for this unique doughnut shop experience. Parlor offers their signature “Layered Doughnut”, which sets them apart from the traditional cake or yeast style. Along with this unique style of doughnut, Parlor seeks to offer something for everyone by offering vegan/gluten-friendly, and a keto friendly doughnut, along with a special doughnut for all the pups out there, with their Doggie Doughnut. The brand has expanded to offer breakfast items such as acai bowls, avocado toast, breakfast sandwiches and tacos. And of course, specialty coffee.
In February 2019, the dynamic combination of unique doughnuts and great coffee launched in Evansville, IN in a niche little downtown shop. The community’s support exploded, exceeding all expectations. Less than a year later, Parlor Doughnuts opened an expansive location on Evansville’s east side, including a large dining area, drive-thru service, and on-site coffee roastery. It’s travel time again with Trey’s Chow Down Road Trip’in the USA for creative chefs, deliciousness and unique travel destinations. Today we’re at the gorgeous Thompson Hotel on the RIVERWALK in downtown SanAntonio, Texas.
When we heard about this beautiful hotel offering fantastic views overlooking the Riverwalk and downtown, we had to give them a visit. The Thompson is NEW to SanAntonio, opening in the middle of 2021, but the classy, cozy and vibrant atmosphere makes it feel as if it has been there forever.
It’s truly impressive, rising above the Riverwalk for an elevated experience in this cultural epicenter. They offer stunning, unmatched skyline vistas, cozy and refined guest rooms, creative culinary delights, and incredible service. You can immersive yourself in the cool nightlife from the rooftop lounge, The Moon’s Daughter, or pony up to the bar and enjoy a Texas-whiskey while you enjoy the splendid SanAntonio skyline.
My favorite option was enjoying cocktails on the pool deck in our private cabana overlooking the river walk. The pool area is amazing, with an overall feel of elegance with rich textures and beautiful colors. You can jump into the pool and enjoy the water right from your private cabana. Just perfect!
The hotel is perfectly positioned over the northern Riverwalk neighborhood, where we watched a boat parade float by at dusk. The lights from the boats beaming off the water and bouncing off the sides of the River Walk were gorgeous.
There are many rooms available and each one will make you feel like a king or queen. We enjoyed a suite complete with a living room, bar area and an incredible bathroom with a spa tube. The staff and room service were perfect; they made us feel like old friends. If you’re looking for a nice little getaway, I would highly recommenda suite for a weekend. You will thank me later!
The chef-driven culinary offerings are plenty! Everything is created and prepared in-house by a talented chef with a first-class culinary team. This isn’t your grandma’s cooking. You will fall in love with the creative, unique and unforgettable flavor profiles they offer. Using fresh, locally-sourced ingredients, vegetables and spices, each dish I tried was colorful, loaded with flavor and delicious. I couldn’t find anything they offer that wasn’t pure culinary perfection.
Located close to the historic Texas Alamo, the SanAntonio Museum of Art, and the Tobin Center for the Performing Arts, the River Walk and plenty of shopping you just can’t go wrong. If you’re looking for a new elevated experience that will immerse you in style, elegance, and a culinary wonderland with stunning views I would highly recommend a visit to the THOMPSON HOTEL SAN ANTONIO, TEXAS.
