If you ever wondered how popular Texas BBQ has become, you need to look no further than the number of successful BBQ Festivals these days. We’ve attended four and hosted two in the last 6 months alone, and there have been many more that we just couldn’t attend.
Texas BBQ has really made big strides in the last 15 years, and has really surged in the last decade. While traveling around the state and attending events, doing restaurant reviews, and hosting my live TV show and podcast, I’ve seen so many changes and new ideas, and they’ve all been for the better. During my travels around the USA, I get asked quite often about the surge in popularity of Texas BBQ. I make my answers brief and easy to understand, because everyone seems to be short on time these days.
To me, the popularity is quite simple: It’s the creativity, hard work, and dedication to producing that perfect meaty flavor. It’s the TEXAS pride that says, “We’re going to be the best, create the best, and sling the BEST Q anyone has ever tasted, or we’ll die trying!†You sure can’t leave out the competitive nature of Texans – that in its self is simply INCREDIBLE! I guess to put in simple terms you can just say, “Well It’s a Texas thing and you wouldn’t understand!” LOL.Â
They understood 9 years ago when they hosted the first ever Houston BBQ Festival and it’s still standing strong today!  On April 3rd, 2022, 28 BBQ Joints, chefs and pit masters attended the 9th annual BBQ festival in Humble. Trey’s Chow Down got a tip from some of our followers in Texas about this amazing festival and we took a ride out to Houston to see what it was all about. After 2 years of waiting due to covid, the FESTIVAL WAS BACK! Chefs and pit masters were smoking up Humble, TX and slinging creative, delicious Texas BBQ for everyone to enjoy.
Have you ever taken a bite of something so delicious that you thought to yourself, “I have to tell someone about this!” I’m sure you have because we all feel that way sometimes. It doesn’t matter if it’s savory, sweet, or both, we just want to tell someone about how perfect a dish was. After traveling around in 2021, eating and visiting with chefs and restaurant folks, I had an idea. I wanted to spread a little deliciousness among my friends; I wanted to share with everyone the BEST DISHES I ATE in 2021.
2021 was our most successful year at locating creative chefs and delicious dishes. We traveled through 10 different states, logging our most miles ever and visiting a record number of chefs and restaurants. I wanted to highlight some of the most unique and delicious dishes you should try in 2022. These are my top restaurants with dishes, and there’s a big variety so there’s something for everyone!
I enjoyed visiting and eating with some of the best chefs and restaurant folks in the business. Each dish has been carefully chosen and is a chef-driven dish prepared by the best! They only use fresh ingredients, vegetables, and spices to create some bold, modern flavor profiles that everyone will love. Most of the eats are simple dishes that are prepared with passion, love, and creativity. Remember, a simple dish is sometimes the most difficult to facilitate because all parts must be complete perfection. I believe that in most cases simple is better because it gives each ingredient that culinary jingle to create deliciousness.
Last week Trey’s Chow Down took another Road Trip for deliciousness as we headed out to beautiful East Texas to the town Paris, Texas. Paris is a wonderful and beautiful city, complete with a downtown country feel and beautiful views. Paris is in Northeast Texas at the western edge of the Piney Woods. It’s in Lamar County and as of the 2010 census, the population of the city was 25,171.
We made the trip to Paris because someone told me about a little food trailer slinging some of the BEST BIRRIA TACOS, PIZZAS, and RAMEN in Texas. If you follow me, you know we live to discover deliciousness for our followers. I’m telling you this an amazing find!
What is Birria? Let me explain! Birria is a Mexican dish from the state of Jalisco. The Spanish term “birria” is used to describe immaterial things without value or quality. It is a traditional ancestral soup or stew made from a combination of chili pepper-based goat meat adobo, garlic, cumin, bay leaves, and thyme, and cooked at a low heat. After cooking it’s usually simmered for about 20 minutes, then blended in a high powered blender until nice and smooth. An authentic Birria Taco, Pizza or Burrito is served with “Consome de Birria” sauce and it is #StupidDelicious.
I’ve been excited and wanting to create my list of top fried chicken joints for over two years, but like fried chicken itself, you just can’t rush perfection. We’ve been enjoying fried chicken all over North Texas from casual, fast casual and fast-food joints and I’ve finally decided it was time to let the feathers fly and expose what I consider to be the BEST fried chicken in the North Texas area.
We have many places selling various forms of chicken nowadays, so I want to be clear about what I mean when discussing fried chicken. I’m talking about fresh, bone-in chicken fried to GBP – Golden Brown Perfection. Wikipedia defines fried chicken as: “Southern fried chicken,” also known simply as fried chicken, is a dish consisting of chicken pieces that have been coated with seasoned flour or batter and pan-fried, deep fried, pressure fried, or air fried. The breading adds a crisp coating or crust to the exterior of the chicken while retaining juices in the meat.
Growing up, we served fried chicken at some of our Chapman Family Restaurants and it was very good. Under our restaurant umbrella we also owned a Churches Fried Chicken franchise, and this is where I truly learned the preparation techniques and the time it took to cook and deliver fresh fried chicken. There really are no shortcuts in the process – if you try and eliminate a step, you’re asking for subpar chicken. Preparing fried chicken isn’t very technical, but I strongly believe that simple cooking processes are sometimes the hardest to pull off. The simpler the dish, the less places there are to hide from subpar preparation.
If you follow me, you know how I feel: Nothing goes better with a delicious meal than family, good friends, and a great story. That being said, let’s talk fried chicken!
When I was a young buck there was a lady cook that went by the name of Mercedes. She would cook for folks around Fort Worth at your house like a caterer would today. She also did other things for folks but her cooking was always fresh southern perfection. She cooked many dishes, but she had two dishes that I loved. I’m sure you can guess one was southern fried chicken – true skillet southern fried chicken from a cast iron skillet. The kind of chicken where every bite is succulent, flavorful, and the chicken juice just runs down your chin and gets all over your grubby little fingers. I can promise you the term “FINGER LICKING GOOD” came from dedicated hard working southern ladies like Mercedes that wouldn’t ever cut corners. Simply put, it was her way or no way in the kitchen!
I will never forget the time I was outside under some big trees and I could smell the chicken cooking. I ran inside and told her I was hungry, and not just once. It was probably more like 10 or 20 times; I was like a parrot on crack when it came to food. Even as a child I had little patience, and when it came to Mercedes fried chicken I had even LESS. I kept on badgering her and she finally had enough. She turned and kicked me out of the house and locked the front door. She said, “I’ll open it soon as I’m finished cooking my chicken, young man!” I was so intent on eating that chicken and I was worried somebody else was going to get it before me. I went around and climbed on the window seal and started tapping on the kitchen window frame and glass. Let’s just say she wasn’t happy, but she finally finished that incredible chicken and called me inside to eat.
I sat down at the table and she gave me two breasts and a leg. I got a big helping of her home-made mashed potatoes, prepared with fresh potatoes, butter and smothered in white cream gravy. The steam was bursting off the taters, and the fried chicken aromas were unforgettable. Every single bite of that chicken was savory, flavorful, succulent perfection. It was exactly like that every time she prepared it! It never varied in flavor or deliciousness and that’s why I’ve never forgotten how incredible her fried chicken dinners were.
Fried chicken has to be prepared fresh, hand-dipped, and coated with a delicious signature batter that is always the same. CONSISTENT. Mercedes used a real cast iron skillet and only cooked three pieces of chicken at a time. She would make her own batter, then hand dip the fresh chicken one piece at a time. Never in a hurry, and she never changed her process. She was patient and passionate about the cook and knew there were no short cuts to achieve the deliciousness everyone loved. I truly miss that woman and her chicken. She meant a lot to me and I always respected her and what she could cook in that kitchen. Man, I can still smell that meal now it still makes my mouth water.
The point of the story is to demonstrate how much I love fried chicken and where my passion for the southern dish derived from in my child hood. While we were traveling around enjoying fried chicken, I always keep Mercedes in the back of my mind.
I hope you will enjoy some of the fried chicken places on my list because I sure did. I had a Best Chicken Dish Special on ABC two years ago and I featured a couple of these dishes on that special. I had a friend in Dallas telling me about Mike’s for over a year before we tried it. I’m just sorry I didn’t take his advice sooner. I get suggestions and recommendations daily – on average about 3 to 4. I should have acted on this one sooner. Mike’s is located in a laundromat building on Maple Ave. in Dallas. Yes, I said a laundromat! Mike’s is slinging what I consider the be the BEST fried chicken in North Texas. Every aspect of their chicken is perfect and it’s consistently perfect every single time. The preparation, cook, and presentation is everything I look for in fried chicken: it’s savory, crispy, succulent, flavorful with a hint of salt and a load of deliciousness. Simply put, they should rename Mike’s Chicken and call it MORE. Because more is all you will want with each juicy bite of chicken. It’s R.I.D.I.C.I.L.O.U.S. – ridiculously delicious that is! Don’t forget Mike’s buttery house biscuits because they are some of the best you will ever put in your mouth.
Unfortunately, as I write my article, Drew’s Place has decided to close temporarily. They will reopen – just follow their social media and watch for notifications on their status. Located in Fort Worth on the west side off Curzon Street, they have an awesome old school atmosphere. I had to include Drew’s Fried Chicken because it’s so perfect and delicious every time. They prepare using fresh chicken and house batter to fry their chicken GBD Golden Brown and Delicious every single time. It’s savory, loaded with great flavors, slightly crispy and has a unique flavor profile that screams Drew’s. It is some seriously delicious fried chicken. You will be sucking your fingers to get every last drop of the flavor-loaded chicken juice. Don’t forget some house-prepared sides, greens or deliciousness. Everything from Drews place is a trip to Deliciousville!  They’re also some of the BEST people you will ever meet!
I like this chicken so much I featured it on my Best Chicken DISHES special on ABC Channel 8 a few years ago. They are located in Deep Ellum in the heart of the arts district. I love that name Brick and Bones, kinda catchy! Classified as Mexican Fried Chicken, it’s something you’ve never tasted before. They will tell you it is a throwback bar in Deep Ellum focused on craft Mexican fried chicken, great cocktails, and curated spirits. They started in the kitchen, where they cooped up and built a menu centering around Mexican-inspired fried chicken, which is their specialty! Prepared with fresh chicken and over 15 different fresh Mexican spices, it’s stupid delicious. The first time I put this chicken in my mouth I said, â€S!@#$%^& W.T.F.†because it was so damn delicious! I ordered a second helping because one just wasn’t enough. If you love lip-smacking savory chicken – some of the BEST in North Texas, then head over to see them at B & B. Tell’em big Trey sent you! Oh and don’t forget the Mac-N-Cheese with your fried chicken.
I know this is considered Nashville Hot Chicken, but I don’t care because it’s dam delicious. Gus will say it’s simply the best-fried chicken on the planet…but you won’t know what they mean until you try a piece or two yourself! I’m telling you: this spicy, crispy fried chicken will make you have chicken dreams while you sleep. I have the same dreams and that’s when I head to Gus’s in Fort Worth. The chicken is savory, light, crispy, and has some heat that you will fall in love with. The legend is that someone asked Gus Vanderbilt of Gus’s World Famous Fried Chicken for his fried chicken recipe and he simply replied, “I ain’t telling.†They marinate it overnight, put a little of this on it, with a dash of that, and then toss it in the fryer. By the time we get the finished cluck cluck, it’s fresh, hot, a little spicy, with a delicious crunchy skin. I can’t ever stop eating the stuff. All I know is Ol’ Gus knows what the hell he’s doing. I’m sure he won’t ever turn loose his legendary chicken recipe. Fortunately for us, you can eat as much as you can buy. You better take a bib, some wipes, and get some chicken to go while you’re at it! It’s a trip straight to chicken deliciousville.
Located on Upper West 7th in Fort Worth, Chef M.T. is one of the original celebrity chefs in the DFW area. He’s been slinging deliciousness in Texas for decades and always uses farm-fresh products to create big, bold flavors that everyone loves. His restaurant is very cozy, with a classy and friendly atmosphere. His creative secret recipe for Fried chicken is no exception. It is loaded with savory, crispy deliciousness. It’s hard to put the chicken down until it’s all gone. Always served HF&D Hot Fresh and Delicious! If you’ve haven’t visited Chef M.T. on Upper West 7th Street then you need to be sure and make that trip. Tell’em Trey sent you and you want some of that HF&D Fried Chicken. You can also get curbside or TOGO if you like. Just get you some!!
I’ve been banging on Lisa’s chicken doors for over a decade, and banging hard! While they are considered to serve simple southern fried chicken, remember that I said simple dishes are the hardest to pull off. Lisa’s just does it right! Using fresh chicken and hand-battering with Lisa’s house batter and then dropping in the fryer, it’s always perfect chicken! I have Lisa cravings all the time and now I order it straight to my house. It’s always savory, slightly crispy, and loaded with deliciousness. And why not? It’s hand prepared with Lisa’s love in the kitchen and everyone follows that recipe of deliciousness. If you haven’t checked out Lisa’s, try them and grab some fried catfish too. You will thank me later I can promise you that!
I’m just going to say the minute I walked in the door and heard those ladies yell “Hi Welcome to Palmers!” I got warm food fuzzies. Palmers is NEW to Dallas but not NEW to the fried chicken world. They offer a vibrant atmosphere with awesome service, delicious fried chicken and a full bar. Yea, a full bar! ” Â They are slinging fried chicken, cocktails, froses and FUN! They offer Authentic NASHVILLE HOT CHICKEN with different levels of heat. The offer different levels of heat. You can pick no heat or 911 call the FIRE department HOT HEAT. The flavor profiles with Palmers secret chicken time tested receipt is savory deliciousness that you will really enjoy. Don’t forget a Palmers fresh FROSES from the bar it pairs perfectly with their fried chicken. Throw those doors open and YELL: “Trey sent us to CHOW DOWN!”
Back in the year 1987, Mr. Williams opened his first fried chicken restaurant in Dallas. Since then they have grown to multiple locations all over the place. I started eating William’s back in the late 80’s and have enjoyed them ever since. Starting with only fresh chicken, they’ve stayed true over the years using the Williams Family secret recipe to create savory, fresh fried chicken deliciousness. It’s always consistent and carries that southern fried chicken deliciousness stamp! If you love authentic southern fried chicken, you need to chow down on some Williams.
Streets Fine Chicken is slinging hand-prepared fried chicken, sides and fresh craft cocktails. I haven’t met the chefs or owners of this brand, but I’ve enjoyed their chicken deliciousness on several occasions. Chef-driven classic southern chicken that is hand-prepared with love and each piece is fried chicken perfection. Every bite offers a flavor profile you can’t and won’t forget. If you haven’t tried Streets then you need to head over and chow down. Don’t forget a fresh tasty cocktail – you will enjoy the added experience. I’m going to make this easy for you and tell you that Babe’s is a family dining experience like no other in the fried chicken world. They offer a cozy family atmosphere with awesome service and delicious southern fried chicken with unlimited family shareable sides. Babe’s will tell you that, “They wanted a sit-down restaurant where people really feel at home. Babe’s is a casual place where you’ll feel comfortable in your blue jeans or cutoffs. Where your neighbors wait on you and your whole family.” That pretty much sums up Babe’s, except to say they are slinging some of THE BEST fried chicken in Texas. It’s always prepared fresh, hand-dipped and with Babe’s passion for savory, crispy deliciousness! If you haven’t been to a Babe’s you need to head over there and chow down. Don’t say I didn’t warn you because they are going to roll you out of there in a wheelbarrow because you won’t be able to stop eating all that savory fried deliciousness! Tell’em Trey sent you!

WOW! What a year 2020 was for the restaurant, food, and culinary world. In my five decades in the restaurant business, I’ve seen disasters of all types and nothing comes close to the devastating effect Covid-19 had on our economy. Restaurants, chefs, pitmasters, and restauranteurs had to make big changes if they wanted to survive the pandemic. Nationwide, we lost over 251,000 restaurants forever and 2.5 million restaurant jobs at the latest estimate. The good thing is that NOW we are on the mend and the Texas economy is in full giddy-up mode! This is why it’s so important to support local restaurants to keep us in giddy-up mode.
Even though things were crazy due to Covid-19 we still worked hard reporting on food and hunting down the best burgers we could locate in North Texas. The pandemic allowed us plenty of extra time to chow down on some tasty burgers; it also allowed burger creators time to come up with some new delicious and creative burgers for all of us to enjoy. If you follow me, you know how much I enjoy a great and tastyburger. Â This is our seventh year for the BEST BURGERcontest in Texas and I’m excited to tell everyone about my delicious burger discoveries.
Did you know that burgers are one of the most sought-after sandwiches in the world? The burger business is crazy in the U.S.A. I don’t have the newly updated numbers of burgers sold in 2020 during the pandemic (and it would be an oddly skewed amount), so we are using the last updated numbers. A national research company states that we sell 6.48 million burgers a day, and around 75 burgers a second! What? Yes, 75 burgers a second! This roughly breaks down as 4,500 burgers every minute, 270,000 every hour, 6.48 million a day, and 2.36 billion burgers a year. A worldwide research study states we sell 50 billion a year worldwide. 50 Billion a year that to me is shocking, but I know how many folks just love a succulent, savory, and delicious burger.

If you follow me then you know I’m extremely passionate about food, drink, creative chefs, awesome service folks, and the restaurants and grub pubs that host us. Last July I started pondering on what I could do to help support local restaurants, chefs, and the service industry. Something that was different, exciting and fun!  I wanted to create something special that hadn’t been tried before. After tossing a few ideas around, the big light in the oven came on, and there it was, swirling around in my brain like berries in a blender. A fantastic and outrageous idea!
I created an outrageous, Texas-sized over-the-top menu full of unique, creative, colorful, delicious, and some massive dishes. These dishes would have to be Chef-driven, very large, creative, and delicious. A few are just simply unique but also delicious. True foodies and couples will love these dishes. They can be shared, used as food challenges, or just eaten because you love food. Whatever the reason, this menu sparks your foodie senses and will make you want to take a trip straight to Delicious-Ville. #Deliciousville
I got together with ten North Texas chefs to discuss my ideas, and some of those chefs even created new and special dishes just for the new Trey’s Chow Down Menu. I also located dishes that had already been created but would fit with the new menu. We have everything from breakfast to dinner;  Burgers, BBQ, Seafood, Steaks, and more!
I made trips all over North Texas and tried every single dish myself. I watched the dishes being created and then I chowed down like a pig at the trough. What I ended up with was some unbelievably amazing dishes that are not only delicious and creative, but they are memorable as well. Dishes you can’t and won’t forget!
When you see these dishes, they are visually R.I.D.I.C.U.L.O.U.S! Every single person will say something like, “OMG, WTH Is That!” Believe me – I know because that’s all I’ve heard for the last eight months while working on this new menu.

WOW!What a year it has been! I would have never believed that thousands of restaurants would close, changing the industry forever. That is exactly what happened in 2020, and things are still changing by the day.
I spent all year twelve months visiting brunch spots, chowing down and visiting with chefs. I felt it important to wait until the end of the year to release my Best and Unique Brunches in DFW on GOOD DAY FOX 4 because I wanted to be sure that all of the restaurants were open and slinging deliciousness for everyone to enjoy. Some of my favorites have closed permanently, and some temporarily due to COVID-19. It was sad that I had to delete restaurants off this years list. We must support our local restaurants, chefs, and service folks by visiting their restaurants, ordering TOGO, or for delivery. They need us now more than ever, especially since it’s the holiday season.
I love any meal that’s loaded with a delicious culinary JINGLE! But, truth be told, I’m in love with brunch because it has a certain vibrancy to it. You can brunch early or late and enjoy some chef-driven tastiness because there is no set time for brunch. I’ve seen people bunch at nine am, and I’ve seen them brunch a three pm. it just doesn’t matter. What does matter is that the brunch is made with a creative spin and is prepared HFD #HotFreshandDelicious.

It’s big, tasty, light brown color, has a little crunch with each bite. In most cases it is smothered in creamy gravy. Yep! The delicious chicken fried steak! Born in Texas, and it is truly the quintessential state dish.
Texans love it so much we even declared an official day to celebrate it!
There has to be hundreds, if not thousands, of places in Texas where you can eat chicken fried steak. Big cities, little Texas towns, back roads, breakfast cafes, deli spots, hamburger joints, expensive eateries, steak houses, and the list goes on. Really, you can go anywhere! Texans are proud of their chicken fried steak. Everyone who knows me can agree that I know where the best dishes are.
Chefs have their own idea on how to prepare their delicious dishes. They have perfected their own recipes for chicken fried steak. In the last decade, Texas chefs have gotten extra creative. Some use round steak/cubed steak, flat iron steak, rib eye, and if they’re going further in creativity they’re using dry aged rib eye. Each different cut achieves a different flavor profile. Whatever you prefer, you’ll surely savor it.
I’ve been eating chicken fried steak my entire life. The family restaurant and beef business is my pride but I know how to judge a chicken fried steak like no other!

As most of you know, my entire life revolves around food, chefs, restaurants, creative, and delicious dishes! I received an email last week from a friend Chase Foxworth who was elated and extremely enthusiastic about a new burger joint in The Colony, Texas. He knew the results of our BEST BURGER CONTEST in 2019 reached over 1.5 million BURGER LOVING North Texans. He understood how excited I would be to see this new concept of burger deliciousness for the 2020 Burger Race. He couldn’t wait to show me! I receive numerous requests to visit new burger concepts, or to test a certain burger. I try to visit each and every request as time allows, but his email was so powerful and full of conviction that I made plans to meet him P.D.Q. and try some of these burgers he was raving and screaming about.
August 18, 2020 is National Fajita Day in the USA!
They say the first culinary evidence of fajitas was in the 1930s, along with the Spanish naming. The cooking style used at that time was by a campfire or directly on a fire pit or in a skillet. Originally, it was made from throwaway cuts of beef by Mexican vaqueros in Southwest Texas. The fajita was developed as an everyday meal in the early 1930s. Since then everyone has fallen in love with the fajita!
Who doesn’t just love some succulent delicious fajitas? I think everyone loves fajitas! Well, at least every one I’ve ever spoken with loves them.
The main issue I’ve learned about fajitas and the folks enjoying them is everyone seems to always want more meat. Some of the other issues I hear from folks when I inquire about how they like there fajitas is pretty basic. They say fajitas can be dry and have little or no flavor, or they didn’t receive enough fixings. Everyone might desire more meat or fixings and eat them differently, use a different choice of corn or flour tortillas, but when it’s all said and done everyone loves fajitas.
Every chef, restaurant, or family business that offers fajitas has a different flavor profile. You won’t find any particular fajita meat with the same flavor profile! Everyone uses a different preparation process. They use an array of different spices, marinades, marinating processes, and cooking techniques. Some restaurants offer you fixings with your fajitas, and some charge you extra for it.
